Low Country Mustard Sauce

Carolina Low Country BBQ sauce is a classic vinegar and mustard-based sauce that is commonly used in South Carolina for pulled pork, chicken, and ribs. Here is a simple recipe to make it at home:


  • 1 1/2 cups yellow mustard

  • 3/4 cup cider vinegar

  • 3/4 cup brown sugar

  • 1/8 cup Worcestershire sauce

  • 1 tablespoon hot sauce

  • 2 teaspoons salt

  • 2 teaspoons table grind black pepper

  • 2 teaspoons smoked paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder


  1. In a medium saucepan, whisk together the yellow mustard, cider vinegar, brown sugar, Worcestershire sauce, hot sauce, salt, black pepper, smoked paprika, garlic powder, and onion powder until well combined.

  2. Place the saucepan over medium heat and bring the mixture to a simmer.

  3. Reduce the heat to low and simmer the sauce for 10-15 minutes, stirring occasionally, until it has thickened slightly.

  4. Remove the saucepan from the heat and let the sauce cool to room temperature before serving.

  5. Store in the refrigerator.
